This salad is ridiculously simple. It’s a MUCH better version of the tomato and cucumber salad available at mall food courts throughout the country. Nothing more than chunks of peeled cucumber and wedges of fresh garden tomatoes, garnished with oregano from the garden and some fennel fronds we happened to have on hand. The dressing is red wine vinegar and good olive oil, along with a little salt and pepper. Dressing it lightly is key- you don’t want it swimming in a flabby salad oil cocktail, as in the mall version. A perfect summer salad.
