Corn is coming back into season, and it is very popular a our house. The kids love it boiled, but my preference is to grill it. After years of experimentation (in the husk, in foil, soaked, etc.) I’ve come to the realization that the best way to grill corn is to peel it, and put it on a hot grill until it starts to char a little bit. Rotate it so all sides are cooked, and enjoy. It produces a delicious caramelized effect, and the leftover kernels are terrific scraped from the cob and added to salads (see pork tenderloin post), salsas, etc.
